Not always do I follow a recipe when cooking. Instead, I like 'playing' with ingredients and trying out new things to see how my family likes it.
I used to buy a 'Chicken Fajita Mix' in the meat department at a local grocery store, which was a combination of chicken breast, onions, and red peppers. However, I wanted to try my own recipe with fresh ingredients and here's what I came up with. This recipe became a family favorite and now with the cooler weather around the corner, I make sure to have the ingredients handy in our pantry.
The nice thing is that all these ingredients are available at your local Trader Joe's, which I love for grocery shopping. They always have great, fresh produce and interesting products from all around the world. This recipe works also well to reheat. So, if you like to cook ahead of time just heat it up when it's time for dinner or should you have left overs it makes a great lunch as well. I always like to cook extra, especially these days when we're all home for lunch.
Ingredients for Chicken Fajitas:
3 tbsp. olive oil
1 shallot onion, minced
1 1/2 - 2 lbs. organic chicken breast, cut in thin strips
1 tsp salt
1 tsp pepper
2 organic, red bell peppers, cut in thin strips
I can of corn
1 cup of organic, low-sodium chicken broth
1 cup of organic, heavy whipping cream
1 cup of shredded, lite Mexican cheese blend
Heat olive oil and sauté onions until clear.
Add chicken breast, salt, and pepper. Turn to coat. Cook chicken over medium-high heat until no longer pink, about 10 minutes.
Add peppers and corn. Cook until crisp-tender.
Add chicken broth, heavy whipping cream and cheese blend. Simmer for about 5 minutes.
I'll serve it over organic brown rice but another great option is to serve it with tortillas.
