Creamy Mushroom Sauce - great with grilled meat


I don't only love to design kitchens, I also love to cook and experiment with fresh ingredients. My husband and I prefer to cook healthy and even our teenagers don't like fast food or any unhealthy ready meals.


With the warmer weather, we BBQ a lot and one evening, while hubby was grilling outside, my eyes caught the mushrooms in the fridge. I wondered what I can do with them to accomplish our meal? So, I took out a pan and got started.... The result was a creamy mushroom sauce that goes well with grilled beef, pork, or chicken. Since that night, I have made it many times over and refined my recipe. It's a hit with our family! If you'd like to give it a try, here's the recipe:

Ingredients

  • 2 tbs sunflower oil or avocado oil

  • 3 garlic cloves, minced

  • 4 tbs chopped onions

  • 12 oz organic brown cremini or shitake mushrooms, sliced (any mushrooms work)

  • 1/2 tsp herb mix (e.g. "Herbes de Provence" available at Trader Joe's)

  • 1/2 tsp pepper

  • 1/2 tsp salt

  • 1/4 cup red wine

  • 1 cup organic chicken broth

  • 1/4 cup organic sour cream

  1. Heat onions and garlic on medium heat until onions are clear and garlic is fragrant.

  2. Add mushrooms and cook until golden brown, ~ 4 to 5 minutes.

  3. Season with herb mix, salt, and pepper and mix well.

  4. Pour in wine, and allow to sizzle. Cook until wine is mostly evaporated, ~ 2 minutes.

  5. Add chicken broth and sour cream and simmer for about 5 minutes.

All done! Note: You can really use almost any type of mushroom and if you're out of sour cream just add heavy whipping cream or vice versa. And, you can always adjust the seasoning to your liking at the end. The beauty of homemade cooking and creating your own recipes is that you can use what you have at home and 'play' with it.
