Years ago, while looking for a new recipe for our Sunset dinner club, I discovered this 'Mint Chutney' sauce and it became a family favorite. Whenever I make grilled lamb chops, I also prepare the mint chutney sauce. It's very flavorful and tastes delicious. Even my children love it and you know how picky kids can be. I had to double the recipe because my family loved it so much and there was never enough.
To serve 4 people you'll need 8 lamb chops (each about 1 inch thick, fat trimmed), mint chutney, as well as salt and pepper.
Ingredients for Mint Chutney:
1 cup of lightly packed fresh mint leaves
1/2 cup olive oil
1/2 cup chopped green onions (white and pale green parts)
3 tbsp parsley leaves
1 tbsp lemon juice
1 peeled garlic clove
1 tsp salt
1/2 tsp curry powder
1/4 tsp cayenne pepper
Mix in a blender until smooth. Makes about 1 cup.
Rinse lamb chops, pat dry. Place chops in a bowl with about 1/4 cup mint chutney; turn to coat. Cover and chill for at least 4 hours or up to 1 day.
Lift lamb chops from bowl (discard any chutney in bowl) and sprinkle all over with salt and pepper. Place on a grill over low-medium heat. Cook chops, turning once, until browned on both sides but still pink in center (cut to test), about 12-15 minutes on each side.
